To change the voice you are using, go to Settings, Speech, Speaking Voice and choose from the list of available voices. You can also purchase and download new voices from the App Store on this screen, and find voices in other languages.
To change the speed and pitch of your voice, go to Settings, Speech and select configure. Tap Speak to hear a preview your voice whilst you adjust the speed, pitch and volume.
